　　胡一刀是金庸小说《雪山飞狐》中的一名角色，是主角胡斐之父，外号辽东大侠，是一名使单刀的绝世高手，为人豪气干云，侠义为怀。为金庸小说中武功绝顶的高手之一。
　　因明末闯王李自成的四大护卫胡苗范田的世代恩怨而跟当时（清朝乾隆年间）苗家后人，金面佛苗人凤决战数日，最后因中毒身亡。
　　飞狐原是胡斐的外号，但是《雪山飞狐》一书之中。胡斐这个名正言顺的男主角，光芒远远不及倒叙故事中的胡一刀（胡斐之父）和苗人凤，甚至不及胡一刀夫人胡夫人（胡斐之母），他们的英雄气概，令人悠然神往，他们的英雄事迹，令人百听不厌。有人把他们三人比作风尘三侠虬髯客、李靖和红拂，虽然不完全恰当，但二男一女，萍水相逢，肝胆相照，侠气若此，除了风尘三侠之外，也委实再找不到更恰当的比较。金庸改动了三侠之间的关系，美女改配了壮士，造成更突出的戏剧效果，阎基初见胡一刀，吓了一跳，只道是不知从哪里钻出来的恶鬼：这人生得当真凶恶，一张黑漆脸皮，满脸浓髯，头发又不结辫子，蓬蓬松松的堆在头上。跟着便看到胡夫人：全身裹在皮裘之中，只露出一张脸蛋想来这皮裘大概像长平上华山里的那袭，是雪白的狐皮吧？阎基见她如此美法，又吓了一跳，他是个粗鲁无文之人，哪懂得。

　　胡一刀与苗人凤祖上情仇纠结，但他两人只是初见。一见如故，但又得马上拼个你死我活，这的确是一种极端的境况。在极端境况之中，人的行为自不被常规所限，何况这三人并非常人？他们在短短的三天内，建立起别人以一生建立的交情，转瞬又变成生死相隔。胡一刀夫妇同死，苗人凤抱着他们的遗愿，一直孤寂地活下去，直至到他再见到他们的儿子。大概胡斐那一刀是应该劈下去的，苗人凤一定死得瞑目。
　　当时胡一刀和苗人凤在沧州相逢，两个非常之人来到这样的非常之地，必有非常之事件。两位大侠在沧州展开了一场空前绝后的鏖战，胡家刀法神出鬼没，而苗家剑法更是举世无双。两个人苦战几天几夜，不禁生出了英雄惺惺相惜的感觉。两个仇家深为对方的品格和武艺折服，都暗暗发誓，不管谁在这场鏖战中死去，都会受到对方永久的纪念和爱戴。于是这场仇杀有了特殊的亲切意味，这是一场奇怪的战争。

　　胡一刀，身负闯王宝藏之谜，为了躲避苗、田、范三家的追杀，一直过着东奔西走的日子。可以说，胡一刀的前半生过得极其惨淡，长期在对决和暗算中度日，今日不知明日事，知道他遇到了他的夫人，冰雪儿，那是一个极度美好的女子，善良聪慧，仗义大气，他和她顺其自然的陷入了爱情之中，并且突破了重重障碍，终于缔结美好良缘。
　　胡一刀正准备携手娇妻找一处僻静之地退出江湖之际，却不巧遇到苗、田、范三家的齐聚一堂，一场恶战在所难免，胡一刀这个铮铮男儿，自然是天不怕地不怕，他满心以为自己可以顺利的将他们打发，却无奈有一个苗人凤，苗人凤武功卓绝，为人且正值无比。
　　胡一刀和苗人凤之间的君子之争无法避免，为了解除苗人凤的后顾之忧，也为了能够有一个公正公平的笔试，胡一刀连夜快马加鞭将苗人凤毕生宿敌斩获。苗人凤和胡一刀之间的对决，已经由最初的性命之搏转化为了武艺切磋，田归农也就沉不住气，用卑劣手段参与了这场对决，并且致使胡一刀毙命。
